Care and Storage

By following the few simple steps below, your potatoes will store in excellent condition for several months.

It is absolutely essential that you store your potatoes in complete darkness. Whether that is covered with a thick blanket or in totally dark room you must keep them in the dark. When potatoes are exposed to even a tiny amount of light for even a short period of time they begin to photosynthesize (you may notice a green tinge to the potato) and this causes the potato to have a bitter taste. The longer they are exposed to light the worse the taste gets! We cannot over-emphasize the importance of keeping them in the dark!!!

The second aspect of storage is temperature. The ideal storage temperature is 38-43 degrees Fahrenheit. At temperatures above 43 the potatoes begin to sprout and at temps. below 34 they will freeze!!!! However, DO NOT refrigerate. This will cause them to dehydrate.

Third, DO NOT wash the potatoes until you are ready to use them! Contact with water will cause them to begin to go soft and decay. We apologize for the dirt and the mess it makes but we want you to have the very best product in the very best condition possible and that requires that we and you, leave the dirt on.

Finally, if you put potatoes in plastic bags, be sure to leave the tops open so they can breath. In closed plastic bags, they begin to sweat and will quickly rot. We recommend leaving them in the mesh bags we pack them in so that they can continue to breath.
